Ingredients
- 1 large onion
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tablespoon salt
- 1 quart canola oil (about 4 cups)
- Salt and pepper, to taste

•With a sharp knife, slice the onion into very thin rings. Place onions in a bowl with buttermilk. Cover and soak for at least an hour.
•Heat oil in a pan until it reaches 375 degrees F, using a candy or oil thermometer to measure.
•Meanwhile, combine flour and salt in a medium bowl and set aside.
•Working in batches, use tongs to grab a handful of onions and place them in the flour, coating well. Shake off excess flour and plunge into the hot oil. Fry until golden brown, about 6 to 8 minutes. Remove and place on a paper towel-lined plate.
•Repeat with remaining onions. Sprinkle with additional salt and pepper as desired. Serve immediately.
