Chocolate Lover's Cheesecake
12 servings. Refrigerate 4 hr or overnight before serving.
- 18 Oreo cookies finely chopped (1 1/2 c)
- 2 T butter, melted
- 24 oz cream cheese, softened
- 3/4 c sugar
- 1 t vanilla
- 1 pkg (8 squares) Baker's semisweet chocolate, melted, cooled slightly
- 3 eggs
Mix crushed cookies & butter; press firmly onto bottom of 9 in springform pan.
Beat cream cheese, sugar, & vanilla with electric mixer on med speed until well blended. Add melted chocolate; mix well. Add eggs 1 at a time, mixing on low speed after each addition just until blended. Pour over crust.
Bake at 325 for 55 min to 1 hr or until center is almost set. (Bake at 300 for 1 hr 5 min if using a dark nonstick springform pan.). Run knife or metal spatula around side of pan to loosen cake; cool before removing side of pan. Refrigerate 4 hr or overnight.
Can dust entire surface of cooled cheesecake with cocoa powder using a wire mesh strainer, if desired. Can also sprinkle with powdered sugar in center with stenciled design such as a heart for Valentine's Day.)
