Chili Con Carne

Ingredients

  • 5 lbs. chuck roast
  • 1/2 cup olive oil
  • 1/2 cup flour
  • 1/2 cup chili powder
  • 2 tsp. cumin
  • 2 tsp. oregano
  • 6 cloves garlic - minced
  • 4 cups beef broth
  • salt
  • pepper

Preparation

Step 1

Cube meat. Heat oil in Dutch oven. Toss meat with flour and chili powder and add to heated oil, stirring. Sprinkle the rest of the spices over meat and then add garlic. Sauté for a few minutes until spices become aromatic. Add broth and salt and pepper to taste. Cook for 3 to 4 hours until very tender, adding more broth if neccesary.
