Ingredients
- 2 cups minute white rice, uncooked
- 1 tbsp. oil
- 4 boneless, skinless chicken brast halves
- 1 can (14.5 oz.) diced tomatoes w/basil, garlic & oregano, undrained
- 1 can (14.5 oz.) cut green beans, drained
- 1/4 tsp. salt
- 1/8 tsp. pepper
Preparation
Step 1
Prepare rice according to package instructions.
Heat oil in large skillet on medium-high heat. Add chicken. Cook until browned on both sides.
Add tomatoes with liquid and green beasn, drained. Bring to boil; cover. Reduce heat to medium-low.
Simmer 5 minutes or until chicken is cooked through (170 degrees). Stir in salt and pepper. Serve over cooked rice.
