Mom's Banana Nut Loaf

Ingredients

  • 1 stick (1/2 C) butter, room temperature
  • 1 C sugar
  • 1 egg, beaten
  • 2 C sifted all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 C (2 large) over-ripened mashed bananas
  • 3 Tbs milk
  • 1/2 C chopped walnuts

Preparation

Step 1

Preheat oven to 350.

Grease a 9x5x3" loaf pan.

Beat butter, sugar, and egg in large bowl until fluffy. Combine bananas and milk in a bowl. Add to butter and sugar. Sift flour, baking powder and baking soda onto waxed paper. Stir into sugar mixture. Stir in nuts. Turn into prepared pan. Bake at 350 for 1 hour or until center springs back. Check edges during baking to see if edges are too browned. If so, add a foil tent.
