Breads: Oatmeal Hawaiian Muffins

Ingredients

  • 4 eggs
  • 1 1/2 cups sugar
  • 2 1/2 cups flour
  • 2 t flour
  • 2 t salt
  • 2 t soda
  • 1 1/2 cups minute brand oats
  • 2 1/2 cups crushed pineapple, undrained
  • 3 cups (10 ounces) flaked coconut

Preparation

Step 1

Combine eggs and sugar, beat until light and fluffy (about 2 minutes).
Sift flour, salt and soda. Add to eg mixture and blend until smooth (2 minutes).
Add remaining ingredients and mix very well.
Spoon in two greased and floured 9X5 inch loaf pans at 325 degrees for 1 hour.
Remove immediately.
Serve warm or cold.
