Insalata di Zucchine

Ingredients

  • 3 medium zucchini, sliced very thin with a vegetable peeler
  • zest and juice of 1 lemon
  • 3 tsp pine nuts, toasted
  • extra-virgin olive oil
  • sea salt, to taste
  • parmigiano reggiano, for grating

Preparation

Step 1

Mix the zucchini slices, lemon zest, salt and cheese together with a squeeze of lemon juice and a drizzle of oil. Let sit, refrigerated, for about 40 minutes. Serve with toasted pine nuts on top.
