Ingredients
- 4 cups vegetable broth
- 12 oz. butternut squash peeled and cubed into 1 " pieces
- 1/2 large Vidalia onion cut into 2" cubes
- 1/2 small apple cut into 2" cubes
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/8 tsp nutmeg
Preparation
Step 1
In a large pot combine broth,vegetables and apple. Cover and boil over high heat. Uncover pot and reduce heat to low. Simmer until squash is tender about 10 min. Puree soup and season with spices.
