Green Beans, Hazelnuts and Shallots

Ingredients

  • pounds green beans, trimmed

  • 2

    tablespoons unsalted butter

  • 2

    large shallots, thinly sliced

  • ½

    cup hazelnuts, roughly chopped

  • ½

    teaspoon salt

  • teaspoon pepper

Directions

1. Bring a large pot of lightly salted water to boiling. Add beans, return to a boil and cook 3 to 4 minutes, until crisp-tender. Remove to a bowl filled with ice water to cool. Drain and set aside. 2. In a saute pan, melt butter over medium heat. Add shallots and hazelnuts; cook 3 to 4 minutes until shallots are softened. Stir in cooked beans, salt and pepper. Stir until beans are warmed through.
