Ingredients
- 2 1/4 c. sifted flour (224 g.)
- 1/2 c. sugar (96 g.)
- 1 c. butter (229 g.)
- 2 whole eggs
- 1 egg yolk (save white)
- 1 1/2 c. brown sugar (302 g.)
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. chopped Maraschino cherries
- 1 c. chopped nuts
Preparation
Step 1
Sift 2 c. flour & white sugar. Cut in butter. Bake in 9X13 pan at 350° for 12 min.
Beat eggs, egg yolk, & brown sugar until fluffy.
Sift remaining ¼ c. flour with baking powder & salt. Blend into egg mixture. Stir in cherries & nuts. Spread over crust. Bake 20-25 min. longer.
Cherry Icing:
Combine 1 slightly beaten egg white, 2 T. cherry juice, & 2 c. powdered sugar. Beat until smooth.
