Ingredients

  • 1 pound bulk pork sausage
  • 4 medium cooking apples coarsely chopped (4 cups)
  • 1 large onion chopped (1 cup)
  • 6 eggs
  • 1/2 t salt
  • 2 1/4 c flour
  • 2 1/2 t baking powder
  • 2 t sugar
  • 3/4 t baking soda
  • 1 t salt
  • 6 T firm butter or margarine cut in small pieces
  • 1 1/2 cup shredded cheddar (6 oz)
  • 2 medium scallions chopped (2 T)
  • 1 cup buttermilk

Preparation

Step 1

1. Spray bottom and sides of 13x9 baking dish with cooking spray
In a 12 in skillet cook sausage apple and onion over med hi heat 10 mins stirring frequently till sausage no longer pink-drain if necessary and spoon into baking dish
2. in med bowl beat eggs and 1/2 t salt with wire whisk or fork till well mixed-pour eggs over sausage
3. in large bowl mix flour, baking powder, sugar, baking soda and 1 t salt-cut in butter-stir in cheese and scallions-add buttermilk and stir till just combined-drop by rounded tablespoons evenly onto sausage mixture
bake 25-30 mins
let stand 10 mins before serving
