Ingredients
- 1/2 cup peach preserves, large pieces snipped
- 1 tbsp white wine vinegar
- 1 tbsp horseradish
- 1 tbsp grated fresh ginger
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 chicken breast halves
Preparation
Step 1
In a microwave-safe bowl, combine the first 6 ingredients. Microwave, uncovered, for 30 to 60 seconds, until preserves are melted, stirring once halfway through cooking time. Cool.
Place chicken in a zip-top bag and pour marinade over it. Seal bag and refrigerate for at least 6 or up to 2 hours, turning occasionally.
Heat grill to high. Grill chicken until browned and just cooked through.
