Pork Chops with Guajillo-Ancho Spice Rub

Ingredients

  • 4 Double Cut Pork Chops
  • 1 Dried Guajillo Chili Pepper
  • 1 Tbs Ancho Chili Powder
  • 1 Tbs Light Brown Sugar
  • 1 Tbs Ground Cumin
  • 1/2 Tsp Ground Cinnamon
  • 1 Tbs Whole Coriander Seed
  • 1/2 Tbs Whole Peppercorns
  • 1 Tsp Kosher Salt

Preparation

Step 1

Let the pork chops come to room temperature before cooking.

Make the dry rub by placing everything (except the pork chops. please), into a spice mill or small food processor. Pulse until well combined.

Cover both sides of each pork chop with dry rub and let stand at room temperature until ready to grill.

Grill over direct-high heat about 3-4 minutes on each side, or until a dark crust forms. After both sides are browned, move chops to the side of the grill (over indirect heat) and continue cooking, grill covered, 10-12 minutes (depending on thickness).

Remove from grill and let chops stand 5-10 minutes before cutting into them.
