Ingredients

  • Guinness Beef Stew
  • 1 TBL olive oil
  • 1 TBL butter
  • 2 # beef rump steak
  • 2 lg carrots
  • 12 red shallots
  • 4 cloves garlic
  • 1/2 c flour
  • 1 Lg tomato paste
  • 2 c Guinness
  • 1 c beef stock
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 TBL brown sugar
  • 1/2 c chopped pecans - opt
  • Fresh chopped parsley

Preparation

Step 1

Peel carrots and slice thickly. Peel shallots and garlic cloves and crush garlic. Trim steak and cut into small 1/2 in cubes. Heat oil and butter in lg saucepan add shallots and carrots, saute until slightly brown on both sides and transfer to dish. In the same saucepan brown meat adding garlic once meat is nicely browned on all sides. Add tom paste and flour to saucepan and stir thru. Cook on low heat for 30 second - don't burn flour. Slowly stir in beef stock and Guinness a little at a time. Stew will thicken. Bring stew to boil. Return onions and carrots and remaining ingred and simmer for 1 hour stirring occas. Cont to simmer until meat is tender and carrots cooked, add S and P to taste. Serves 4-6.
