Ingredients
- 2 c Yukon Gold Mashed Potatoes
- 2 tbsp mashed roasted garlic cloves
- 2 scallions, finely chopped
- 1/4 c cream cheese, softened
- 1 egg, slightly beaten
- 1/2 tsp salt
- 1/2 tsp pepper
- Olivado Extra Virgin Avocado Oil for frying
- Sour cream, optional
Preparation
Step 1
Combine all ingredients in a large bowl, mixing well. Roll a small handful of mixture into a ball and lightly press flat forming a disc. Repeat until all of the mixture is used. Heat a nonstick skillet over medium high heat for 2 minutes.
Pour 2 tablespoons of oil into the pan, swirling to coat. Place potato cakes a few at a time (being careful not to overcrowd the pan) for about 3 minutes on each side until browned and crispy. Serve with sour cream on top, if desired.
