Country grilled cheese

My spin on an old classic-my country grilled cheese sandwich with homemade refrigerator pickles. Mmmmmmmmm.........

Ingredients

  • Country white bread
  • Sharp cheddar cheese
  • Red Onion
  • Macintosh apple
  • Olive oil

Preparation

Step 1

Slice cheese thin, set aside. Cut or chop onion to desired style (I chopped mine). Add about 2-3t. oil to pan (enough for onion and for excess when onion is removed) over medium low heat. Saute' onion until flimsy, about 2 minutes, remove from pan to small dish, leaving remaining oil in pan. Turn heat to low and add both slices of bread. Cover one slice of bread with cheese. Thinly slice the apple (about 3-4 slices for this sandwich). Let underside of bread brown lightly, about 5 minutes (lift empty slice to check on browning) When bread has just about reached the desired level of toasting, add apple slices and onion on top of the cheese and turn empty slice of bread on top of sandwich. Cover pan for about 3-4 minutes until cheese has melted out of the bread.
