Balsamic roasted onions

  • 2 1/2 lbs onions
  • 3 whole cloves
  • 1 bay leaf
  • 2/3 c balsamic
  • 2 t water
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 t olive oil



Step 1

put rack in middle of oven and preheat to 375

trim 1/2" from top and bottom of onions. peel and halve crosswise. arrange cut side down in a 3qt shallow glass dish. add cloves and bay leaf. whisk together remaining ingredients til combined and pour over onions.

cover with foil and roast for 30 minutes. remove foil, discard bay leaf and roast uncovered 30 minutes. turn onions over and roast til tender and liquid is reduced to a syrup, about 20-25 minutes. discard cloves. serve warm or room temp
