Ingredients
- 1 lb spaghetti
- 1/4 cup EVOO
- 4 medium garlic cloves, crushed
- 1/4 lb veggie bacon strips, diced
- 1/4 cup dry white wine
- 3 large eggs
- 1 cup grated peccorino cheese
- 2 tbsp minced parsley leaves
- ground pepper
Preparation
Step 1
1. Cook pasta according to package directions.
2. While cooking, heat oil and garlic in skillet over medium heat. Cook garlic until golden, about 2-3 minutes. Add veggie bacon and cook untl just crisp, 1-2 minutes. Add wine, simmer for 2-3 minutes, remove from heat, cover and keep warm.
3. Lightly beat eggs, cheese, parsley in large bowl.
4. Drain pasta, transfer to bowl with egg mixture and toss. Stir in bacon mixture and season. Divide between warmed pasta bowls.
