toasted sesame sticks

a simple combination of flour, spices, sesame seeds, oil and water, toasted for a few minutes in the oven and enjoyed in copious amounts
Ingredients
- 1/3 c sesame seeds
- 1 c whole wheat flour
- 1 c unbleached flour
- 1 tsp salt
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 5 tbsp sesame or olive oil
- 1/2 c water

Step 1
toast the sesame seeds in a dry frying pan over high heat, shaking every few seconds until they are toasty brown and making crackling noises
sift together both flours, salt and spices, then add the toasted sesame seed. mix in the sesame oil until well incorporated – it should be a crumbly, powdery consistency that isn’t yet wet. lastly, mix in the water and knead until even.
turn the dough out onto a lightly floured surface and roll out until it’s as thin as you can get it.
cut the dough evenly into thin strips, the easiest way to do this is with a pizza cutter
lay out on a baking sheet, covered in parchment paper if you have it, and bake at 325F for 12-15 minutes.
