Spinach Madeleine

Ingredients

  • 2 packages frozen chopped spinach
  • 3/4 teaspoon celery salt
  • 4 tablespoons butter
  • 1 whole onion
  • 6 oz. roll jalapeno cheese
  • 1/2 cup evaporated milk
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup spinach juice
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon garlic salt
  • salt to taste
  • 2 tablespoons flour
  • red pepper
  • bread crumbs

Preparation

Step 1

Cook spinach according to directions on package; drain & reserve ½ cup liquid. Melt butter in saucepan over low heat. Add flour, stirring until blended & smooth, but not brown. Add onion & cook until soft. Add ½ cup of spinach liquid & evaporated milk slowly, stirring to avoid lumps until thick & smooth. Add seasonings & cheese that has been cut into small pieces, stir until melted, & combine with cooked spinach. Cover with bread crumbs.
