spaghetti squash and meatballs
- 1 spaghetti squash, halved lengthwise and seeded
- 3/4 c. quick cooking oats
- 1/2 c. milk
- 1/4 tsp. salt
- 3/4 lb. ground beef
- 1/2 c. parsley
- 1/4 c. + 2 tbs. grated parmesan
- 1 large egg
- 1 tbs. evoo
- 1 chopped onion
- 1 can diced tomato
- 1/2 c/ water
- 1/4 tsp. red pepper flakes
Preheat oven to 425*. Steam squash halves upside down till tender, ~18 minutes.
In medium bowl. combine oats, milk and salt, let soak 10 min.
Add beef, parsley, cheese and egg to oats and mix. Form 16 balls and place on oiled rimmed baking sheet. Place in oven with squash.
In a large skillet, heat oil and cook onions and mushrooms 5-6 min. Add tomatoes w/juice, water, pepper flakes and cook until thickened ~5 min.
Place cooked meatballs in the sauce and cook covered, 5 min.
Divide squash for 4 servings with fork, top with 4 meatballs and 1/4 sauce. Sprinkle with cheese and parsley.
