Easy Chickpea Oat Burgers

Ingredients

  • 2 teaspoons vegetable oil
  • 1 1/2 cups chopped onions
  • 2 cups quick-cooking rolled oats (not instant)
  • 1/2 cup ground walnuts
  • 1 cup cooked or canned chickpeas, rinsed and drained
  • 3/4 cup plain, unsweetened soymilk or rice milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon whole celery seeds
  • 1/4 teaspoon dried sage

Step 1

Heat the oil in a large skillet. When hot, add the onions and cook and stir for about 15 minutes, or until very tender and golden brown. Watch closely and adjust the heat as necessary so the onions do not burn.

Combine the oats and walnuts in a large bowl. Put the chickpeas, soy milk, salt, garlic powder, onion powder, celery seeds, and sage in a blender and process until very smooth and creamy. Pour into the oats and walnuts. Add the browned onions and mix well. The mixture will be fairly stiff. Let rest for 5 to 10 minutes so the oats can absorb the liquid.

Form into 8 thin, flat patties using about 1/3 cup per patty. Place on a sheet of waxed paper as soon as they are formed.

Put a large skillet over medium heat and coat with a thin layer of vegetable oil. When hot, add the burgers, lower the heat, and brown them for 5 to 7 minutes on each side, turning them over once.
