Quick Chicken Nuggets

“Chicken again tonight? It’ll be good news for the kids when they taste these crispy homemade chicken nuggets.”

Ingredients

  • 1 1/4 lb. boneless, skinless chicken breast halves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 4 cups corn flakes
  • 2 large eggs
  • 2 tbsp. milk
  • 1/2 cup barbecue sauce
  • 2 Tablespoons honey
  • 1 Tablespoon apple-cider vinegar

Preparation

Step 1

Preheat oven to 400°F. Generously spray a large rimmed baking sheet with nonstick cooking spray. Cut the chicken into 2-inch pieces. Season with the salt, pepper and paprika.


Finely crush the corn flakes and place in a large shallow dish. Place the eggs and milk in a separate large shallow dish. Whisk until smooth.


Dip the chicken into the egg mixture, then press firmly into the crushed corn flakes, coating both sides. Place the chicken on the prepared baking sheet. Bake for 5 minutes. Turn the chicken pieces over. Bake until the chicken is cooked through, 5–7 minutes longer.


Meanwhile, combine the barbecue sauce, honey and vinegar in a small bowl until smooth. Serve the chicken nuggets with the sauce for dipping.
