Creamy Spinach Penne

  • 12 oz fresh spinach leaves, stemmed
  • 12 oz penne pasta uncooked
  • 1 clove garlic
  • 1 cup low fat cottage cheese
  • 1/4 cup low fat milk
  • 1/4 cup parmesan cheese
  • 1 tsp dried crushed basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 oz roasted red peppers drained and chopped

Cooking time 27mins


Step 1

cook spinach in large pot of boiling water for 1 minute. Remove spinach from water with a slotted spoon reserving the water to cook the pasta. Rinse spinach with cold water and drain well, chop spinach and set aside.
Add pasta to boiling water cook 10 minutes drain well.
Meanwhile place garlic in food processor process until minced. Add chopped spinach, cottage cheese and milk, process until well blended. Add parmesan cheese and seasonings, mix well, and toss with pasta and red peppers.
