Apple Bok Choy Salad

  • 1 bunch of bok choy
  • 2-3 medium Gala apples, chopped
  • 2-3 small carrots, shredded
  • 1/2 red onion, chopped
  • 1/2 cup almond milk
  • 1/4 cup raw cashew butter
  • 1/4 cup balsamic vinegar
  • 1/4 cup raisins
  • 1 teaspoon Dijon mustard



Step 1

Combine bok choy, apples, carrots, and chopped onion in a large bowl.
Blend almond milk, cashews, vinegar, raisins, and mustard in a high-powered blender. Add desired amount to chopped vegetables.
