Chive mustard chicken

Ingredients

  • 2 t flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 6oz chicken breast
  • 1/2 c white wine
  • 1 t dijon
  • 1 c low sodium chicken broth
  • 2 t olive oil
  • 1/2 c shallots
  • 1/2 lb snap peas
  • 1/4 c chopped chives

Preparation

Step 1

combine flour,salt pepper in bowl. dredge chicken and reserve flour mix

combine wine and mustard; stir in broth

lg skillet, heat 1t oil over md heat. add chicken, sauté til golden, transfer to plate

add remaining oil, add shallots and cook 30 seconds. stir in reserved flour mix and cook til dissolved. add wine mix and bring to boil. stir constantly

return chicken and juices to skillet. reduce to md/low heat, cover and simmer. til chicken is cooked. remove chicken. add peas to skillet and return sauce to a boil over high heat. cover, reduce to md/low heat til peas are crisp/ tender ; about 1 minute. stir in chives.

spoon over chicken breasts and serve
