Ingredients

  • 1 1/2 lbs of Bulk Pork Sausage (not in skins, your choice of type)
  • 1 tsp Salt
  • 1/2 tsp Sage
  • 1 Cup Yellow Corn Meal
  • 4 Cups of Water

Preparation

Step 1

In sauce pan, break up sausage in small pieces and brown.
Add 4 Cups of Water stirring to separate meat. Heat to boiling and reduce heat and simmer for 20 minutes.
Drain Meat reserving 3 Cups of Stock.
Add Salt and Sage to Stock and bring to a boil.
Combine Corn Meal and 1 Cup of cold Water and gradually stir into stock mixture.
Cover and cook over low heat for 10 minutes stirring occasionally.
Add Sausage and pour mixture into 9 1/2 x 5 x 3 inch loaf pan.
Cool preferrably overnight.
Slice cooled mixture and fry over medium high heat.
