Ingredients

  • 3 Tbsp of Oleo (or Butter)
  • 2/3 Cup of "Master White Sauce" (Recipe Below)
  • 1 Cup Water
  • 1/2 lb of Cheddar Cheese Diced
  • 4 Eggs Separated
  • Master White Sauce
  • 2 Tbsp of Butter
  • 2 Tbsp of Flour
  • 1/4 tsp of Salt
  • 1 Cup of Milk, 1/2 and 1/2, or Cream

Preparation

Step 1

In a small saucepan over low heat, melt Oleo (or Butter).
Remove from heat and stir in Master White Sauce and Water.
Bring to a boil over medium heat stirring constantly and bring to a boil for one minute.
Add Cheddar Cheese.
Cook over Medium low heat stirring oonstantly until Cheddar Cheese is melted.
Remove from heat.
In a small bowl, beat yolks slightly. Gradually add hot Cheese mixture to Egg yolks, mix well.
In a large bowl, beat Egg Whites until stiff. GENTLY fold Egg Whites into Cheese mixture.
Pour into a 1 1/2 Quart Casserole (Ungreased).
Place Casserole in pan of warm water 1" deep.
Bake in pre-heated 350 degree oven for 1 1/4 hours or until Knife inserted into Casserole comes out clean.

Master White Sauce:
Melt Butter and remove from heat.
Add Flour and Salt and stir until smooth.
Add liquid gradually, stirring constantly over low heat until mixture thickens.
