Meat Loaf Frosted w/Mashed Potatoes.

Ingredients

  • 3-Medium size brown potatoes.
  • 1 1/2-Lb. Lean ground beef.
  • 1 -can Campbell's Golden Mushroom Soup.
  • 1-cup Sm. bread cubes.
  • 1/4-cup finely chopped onion.
  • 1 -egg, slightly beaten.
  • 1/2-Tsp. salt.
  • 3/4-Tsp. pepper.
  • 1/4-cup water.
  • 1 to 2-Tbs. drippings.

Preparation

Step 1

Boil potatoes, and mash.
Mix beef thoroughly with 1/2 cup soup,
bread, onion, egg, salt, and pepper.
Shape firmly into loaf; place in shallow
baking pan.
Bake at 350 degrees for 1 hour. Frost
loaf with potatoes; bake 15 minutes more.
Blend remaining soup, water and heat.
Pour over the potatoes/loaf.
