Ingredients
- 1 1/4 cups unsifted all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp.salt
- 2 1/2 cups quick-cooking oats
- 1 cup margarine or butter
- 1 cup peanut butter, creamy or chunky
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 2 eggs
- 1 tsp. vanilla
Preparation
Step 1
Stir together flour, baking powder, baking soda and salt in medium bowl. Mix in oats. In another bowl, beat margarine/butter and peanut butter on medium speed of electric mixer until smooth. Beat in sugars until blended. Beat in eggs and vanilla. Add oat mixture and stir by hand until well combined.
Shape mixture into 2-inch balls. Place 6 balls on ungreased cookie sheet and flatten each to 3-inches in diameter. Bake at 350 degrees for 15-17 minutes, or until golden brown. Remove from cookie sheet and cool completely on wire rack. Store in tightly covered container. Makes about 24 big cookies.
