Garlicky Sweet Potato Fries

Recipe that looked yummy and which Kerry wrote down while we were at the ophthalmologist's office waiting for Dad to get out of surgery.

Ingredients

  • 2 large sweet potatoes, cut into 1/2-inch wedges
  • 1/2 cup olive oil
  • 1/4 cup chopped fresh parsley
  • 4 garlic cloves, minced
  • Sea salt
  • Freshly ground pepper

Preparation

Step 1

In a large bowl toss sweet potatoes, olive oil, parsley and garlic. Add 1 teaspoon salt and 1 1/2 teaspoons pepper until evenly coated. Cover with plastic wrap and marinate for 2 hours.

Heat grill to medium. Grill sweet potatoes until tender, turning once, 7 to 8 minutes per side. Serve hot or at room temperature.
