Balsamic Caviar

Agar agar: an edible thickener made of sea vegetables, great vegetarian alternative to gelatin.

Serve "caviar" on baguette slices spread with good goat cheese.

Ingredients

  • 1/3 cup balsamic vinegar
  • 1 tsp agar agar
  • 1-3 cups olive oil (grocery store brand, not expensive)

Preparation

Step 1

Pour olive oil into a bowl and freeze for 30 minutes.

Meanwhile, heat vinegar and agar in a saucepan until it boils. Remove from heat.

Pull olive oil out when chilled. Fill syringe or eye dropper or very thin topped squeeze bottle, with vinegar mix.

Make small droplets into the oil and let fall to bottom. Swirl to make sure they keep their shape and remove with a slotted spoon into a bowl of water to rinse the balsamic pearls.

Remove from water and place onto a paper towel-lined plate and put in refrigerator until ready for use.
