Bean Soup

Ingredients

  • 2 strips bacon
  • 1 onion, sliced
  • 1 cup dried Navy beans
  • Water to cover
  • Salt and pepper to taste

Preparation

Step 1

Chop up bacon and fry in heavy pot till crisp. Add onion and cook until light golden brown. Add beans and carefully pour in the water.
Simmer gently until beans are soft, about 2 hours. Rub through a colander or leave whole, as desired.
