CAESAR DRESSING

Ingredients

  • 1 egg
  • 1 tbsp white wine vinegar
  • 2 to 4 anchovy fillets in oil, drained and chopped
  • 1 garlic clove, crushed
  • 1 tsp Worcestershire sauce
  • 1/2 cup extra-virgin olive oil
  • 3 tbsp freshly grated Parmesan cheese
  • Salt and pepper to taste

Preparation

Step 1

Boil the egg for 3 minutes, then immediately plunge it into cold water. Remove shall and place egg in a blender. Add the vinegar, anchovies, garlic, Worcestershire and a little salt and pepper and blend until frothy. Gradually whisk in the oil in a steady stream until dressing has thickened. Stir in the Parmesan and adjust seasoning to taste.
