Ingredients

  • 1 pound Angel Hair
  • Salt and Freshly Ground Pepper
  • 3 Tomatoes (cubed)
  • 1 bunch Basil (torn)
  • 1 cup Mozzarella (cubed)
  • 1/4 cup Fresh Breadcrumbs
  • 1/4 cup plus 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Parsley (chopped)
  • 1 tablespoon parmesan
  • 4 garlic cloves (sliced)

Step 1

Drop the angel hair into the water and cook for 1 minute less than package instructions.
In a saute pan add 1/4 cup of olive oil and garlic. Saute over low heat until garlic becomes fragrant (being careful not to let it brown). Add the cooked pasta to the olive oil and garlic with a little pasta water. Combine the tomato, basil, and mozzarella in a large bowl. Season generously with salt and freshly ground pepper. Add the pasta, along with garlic olive oil, and toss. In a small saute pan toast breadcrumbs with olive oil, parsley and parmesan. Remaining basil Garnish pasta with breadcrumbs and basil.

shortiespiceI cater and have made some variation of tomato basil pasta a million times but THIS recipe was freaking AMAZING!! 1st off, I sprung for actual baby heirlooms in a variety of colors, shapes and sizes from grape to cherry tomatoes and I really used almost as much salt as Michael did on the show & probably even more cracked pepper. Then I made homemade bread crumbs from 2 loaves 1 ciabatta and 1 whole wheat boulle (took forever to dry out though - 1 chunk on grill and 1 in oven to see if it made a difference, it didn't & then had to use hand blender to break them down into crumbs) and added the zest and parsley after toasting in skillet with olive oil, but forgot the parm...didn't matter, the bread crumbs MADE the dish. My 5 yr old who is finicky about tomatoes inhaled it and gave me high 5's all night! And yes, prepped tomatoes w/ plenty o' salt and pep, boccacini 1/2'd, and breadcrumb mix 1st before cooking pasta. I am still in shock about how unbelievable this tasted!...more

akameg2I made this with spinach instead of basil and with cherry tomatoes because that is what I had. A suggestion: prepare the basil, tomatoes, and mozzarella before starting the pasta and sauteing the olive oil/garlic. That way the pasta doesn't have a chance to dry out. Really enjoyed this dish and think I will try it with the basil and also add other things to it next time....more
