Ingredients

  • 3 Tablespoons olive oil
  • 1 large chopped onion
  • 1 chopped red bell pepper
  • 1 chopped orange bell pepper
  • 4 stalks diagonally sliced celery
  • 1 pound boneless skinless chicken breast cut in 1" pieces
  • 1 pound kielbasa sausage cut in 1" pieces
  • 2 cloves minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 ( 4 ounce ) can green chiles, drained
  • 1 ( 15 ounce ) can garbanzo beans, with liquid
  • 1 ( 15 ounce ) can whole tomatoes,broken up
  • 1 ( 15 ounce ) can water
  • 4 cups diced and peeled sweet potatoes
  • 1 teaspoon sea salt
  • garnish : chopped cilantro, green onions, and sour cream

Step 1

Heat the olive oil in a large saute pan or skillet at medium-high and saute the onion, red and orange peppers, and celery, until soft, about 3 minutes, then remove from pan using a slotted spoon. Reduce heat to medium and cook the sausage and chicken until the chicken is brown, about 5-8 minutes. Add the spices and garlic, and cook another 30 seconds to 1 minute. Transfer to a stock-pot. Add the green chiles, garbanzo beans, tomatoes, water, sweet potatoes, and sea salt. Reduce heat to low, cover, and simmer for about 30 minutes, stirring often. If desired, garnish individual servings with chopped cilantro and green onions, and add a dollop of sour cream.
