Ingredients
- 4 cups self-rising flour
- 2 tablespoons sugar
- 1 stick butter melted
- 2 cup mashed sweet potatoes
- 1 1/4 cups milk
- 1/2 teaspoon baking powder

Step 1
Combine first all ingredients in a bowl but potato and milk. Add mashed sweet potato and milk, stirring just until dry ingredients are moistened. Turn dough out onto a floured surface and knead just a few times.
Roll dough out to 1/2-inch thickness; cut with a 2-inch biscuit cutter. Place biscuits on an ungreased baking sheet and brush with the melted butter. Bake at 400° for 15 to 20 minutes, or until nicely browned.
Makes about 15 to 18 biscuits.
