- 2 boneless skinless chicken breasts
- 3-4 c broth
- 16 oz salsa verde (green tomato sauce)
- 1 sweet onion, sliced
- 1 bunch fresh cilantro
- Salt & pepper to taste
In deep sauce pan place chicken & broth; boil over med heat until chicken is fully cooked. Drain broth from chicken leaving only 2 c in pan & reserving excess.
Add salsa verde, onion & cilantro to chicken in pan. Simmer 15 min until onions are tender. Add salt & pepper.
Serve with rice using reserved broth for making the rice.
