Apple Oatmeal Cookies with Maple Glaze

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup shortening
  • 1/4 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 1/2 teaspoon vanilla
  • 2 cups old-fashioned oats
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 2 apples, peeled, chopped (2 cups)
  • 1 cup coarsely chopped walnuts

Preparation

Step 1

Preheat oven to 350.

In the bowl of your KitchenAid Stand Mixer, fitted with the flat beater, on speed 4, cream together the sugars, butter and shortening until light and fluffy.

Continue beating and add eggs and vanilla. Stop mixer and scrape down the bowl once. In a separate bowl, stir together the oats, flour, baking soda and spices. With the mixer on speed 2, add the dry ingredients to the wet and mix until just blended. On speed 1 stir in apple and nuts.

Using a small ice cream scoop or in rounded tablespoonfuls, place cookies about 2 inches apart on ungreased cookie sheets.Bake 13 to 15 minutes or until edges are golden brown and centers are set. Move cookies to cooling racks. Using spoon, drizzle about 1 teaspoon glaze onto each slightly warm cookie. Allow cookies to cool completely before storing.

MAPLE GLAZE

In a clean bowl, using the wire whip attachment on speed 4,beat together:

2 cups confectioners' sugar
3 tablespoons apple cider, apple juice or water, or as needed
3 tablespoons real maple syrup

Drizzle lightly over slightly warm cookies.
