Ingredients

  • 1 white onion diced and divided
  • 1/2 pint cherry tomaotes chopped
  • 3/4 cup crumbled queso fresco (this is a cheese, can sub feta and add few drops of hot sauce)
  • 1 cup fresh corn kernels
  • 3 tbsp lime juice
  • 1 red bell pepper diced
  • 1 tbsp evoo
  • 2 15-oz cans no salt added black beans drained and rinsed
  • 3/4 tsp salt
  • 4 oz tortilla chips
  • 1 lime cut in wedges

Preparation

Step 1

In a large bowl toss tgthr ½ the onion with the tomatoe, cheese, corn, and lime juice.
In a large skillet saute the remaining onion and bell pepper in the oil until lightly browned, 2-3 minutes.
Stir inthe beans and saute for another minute.
Add the contents of the skillet to the large bowl, mix together and season with slat.
Serve w/ chips and lime wedges.
