Sweet Onion Casserole

  • 1 T canola
  • 4 c chopped sweet onion
  • 1/2 c uncooked long grain rice
  • 2/3 c skim milk
  • 1/2 c gruyere, shredded
  • 1/4 t salt
  • 1/4 t pepper
  • 1/8 t allspice
  • 1/3 c grated parmesan
  • 2 T chopped parsley



Step 1

Prehet oven to 325
Heat large skillet, add oil to coat. Saute onion, then place in large bowl.
Cook rece for 5 min in boiling water. Drain.
Stir rice with next 5 ingredients thru allapice into rice. Sponn mixture into 8 inch baking dish coated with cooking spray. Sprinkle with parmesan. Cover bake at 325 for 40 mins. Uncover and bake an additional 5 mins.

Top with parsley.
