Ingredients

  • 3/4 c salted, roasted peanuts
  • 1 c all purpose flour
  • 1/2 c whole wheat flour
  • 3/4 c packed, lt. brown sugar
  • 3/4 tsp salt
  • 1 stick unsalted butter, chilled and cut into pieces
  • 3/4 c natural, creamy pb
  • 1 tsp vanilla extract
  • 1 c jam

Step 1

position rack in centre of oven and heat to350. line 8" square baking pan with parchment, letting the excess hang over.

pulse peanuts in processor until chopped. transfer to md bowl

in processor bowl, mix flours, brown sugar and salt. add butter and pulse til mix is a coarse meal. add pb and vanilla and pulse til crumbly. measure out 2/3c of mix and add to peanuts.

dump remaining mix onto parchment and pat down firmly. spoon jam on top and spread to within 1/2" of edges. sprinkle remaining crumb mix over top going all the way to the edges.

bake til top is golden and jam is bubbling, about 45 minutes. if top browns too quickly, lay a piece of foil over it. transfer pan to a rack to cool

grasp parchment to lift out of pan. cut into 16 squares
