Step 1

2-3 Tbls extra virgin olive oil
4-5 cloves of garlic minced.
1 small shallot minced.
1 Tbls tomato paste, plus ½ cup water
Grated Cheese (if desired)
4-5 large basil leaves sliced
Salt & Pepper
Heat olive oil in a large pot and add minced shallot and garlic. Saute till fragrant, not browned. Add tomato paste and quickly stir. Add tomatoes and bring to a boil. At this point, if you like puree with an immersion blender to desired consistency. Season with salt and pepper. I like to add the rind of any sharp cheese (provolone, parmesan, etc) and also the water at this point. Bring to a simmer and add the basil and continue to simmer until all the flavors blend together.
