Ingredients
- 2 T EVOO
- 3 boneless skinless chicken breasts cut into 1 in squares
- 1/2 onion, chopped
- 2 c sliced mushrooms
- 1 garlic clove, minced
- 1/2 t salt
- 1/4 t fresh ground pepper
- 3/4 - 1 c chicken broth
- 8 oz sour cream
- 2 t ground paprika

Preparation
Step 1
Pour oil in skillet & sauté chicken stirring constantly for 5 min until no longer pink. Set chicken aside & keep warm.
Add a little more oil & gently sauté onion, mushrooms & garlic for 3 min. Add salt, pepper & broth. Return chicken to skillet. Cook over med heat 2 min; add sour cream & paprika. Simmer, do not boil, until heated through.
Serve over wild rice.
