Stir-fried sesame kale and red cabbage

  • 1 large bunch kale, well rinsed
  • 1/2 medium head red cabbage
  • 1 1/2 tablespoons olive oil
  • 1 medium red onion, quartered and thinly sliced
  • 2 teaspoons grated ginger
  • 1 tablespoon dark sesame oil
  • 1 tablespoon sesame seeds, or more to taste
  • Salt and pepper, to taste

Preparation

Step 1

Strip the kale leaves from the stems. Stack a few leaves at a time and cut them into narrow strips. If you like, slice the stems thinly to use in the stir-fry. Cut the red cabbage into thin slices about 2 inches long.

In a large skillet over medium heat, heat the olive oil. Add the onion and cook, stirring, for 5 minutes. Add the ginger, kale, and cabbage. Turn the heat to high. Stir-fry for 3 to 4 minutes, stirring often, until both are brightly colored and tender but still crisp.

Remove from the heat. Stir in the sesame oil, sesame seeds, salt, and pepper. Taste for seasoning and add more sesame seeds, if you like.
