White Bean, Potato and Pancette Pizza

Ingredients

  • 1 can cannelini beans
  • 4 tablespoons olive oil
  • 4 cloves of garlic
  • 4 tablespoons rosemary, chopped and divided
  • 1 teaspoon sea salt
  • 3/4 cup grated parmesan cheese
  • 3/4 cup mozarella
  • 10 fingerling potatoes, thinnly sliced
  • 1/2 pound pancetta

Preparation

Step 1

1. Preheat ovent to 500 degrees

2. Bring 1 quart of water to boil. Add potatoes and boil for five minutes or until tender. Drain and set aside.

3. In a saute pan, cook pancetta until crisp.

4. In a food processor, combine beans, oil, garlic, 3 tablespoons rosemary, salt and pepper. Puree until smooth.

5. Press pizza dough onto pizza pan to desired size.

6. Using a spatula, spread bean mixture across dough in an even layer.

7. Place sliced potatoes evenly across dough.

8. Place pancetta evenly across dough.

9. Top with mozarella and parmesan.

10. Bake until top of cheese is melted and just starting to brown.
