Crash Hot Potatoes

  • 12 whole New Potatoes (or Other Small Round Potatoes)
  • 3 Tablespoons Olive Oil
  • Kosher Salt To Taste
  • Black Pepper To Taste
  • Rosemary (or Other Herbs Of Choice) To Taste

For now, though, let’s take a chill pill and make Crash Hot Potatoes! Thanks, Trish from Australia, for sharing it.

Begin by bringing a pot of salted water to a boil.

Add in as many potatoes as you wish to make, and cook them until they’re fork-tender. And yes, I realize my pot is a little full, but listen: my boys filled my large dutch oven with a combination of dog food, potting soil, and gravel yesterday, and then they placed it on top of our garage. I have to learn to make do around here.

When the potatoes are tender, place them on the cookie sheet…

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.

On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.

Oh these look delicious. I would probably add garlic as well as the herb.

Weird…I made these last night with Yukon Golds from a recipe on Serious Eats last week….I almost didn’t eat my steak, they were so good! A big plus is the boiling can be done ahead a little bit, and they only get better the longer they roast, so “timing” your dinner is pretty easy!

The only thing I would add is CHEESE (it makes the world go ’round)!

I’d add a bit of chopped onion and some crumbled bacon.

I think I might make them for dinner tonight…that is if my pregnancy tastebuds don’t go crazy and only allow me to eat yogurt…

I sent you a recipe for my favorite chili ever. Use some of that left over steak in it, if you have any left over that is. The flavor combo of chili, cumin, coriander, and cilantro make it out of this world! And then when you combine it with tender chunks of smokey flavored beef. Well….you know.

Being from Idaho you would think I know every way possible to cook potatoes. This recipe looks so good. I will probably make them tonight. Thank you ever so much for posting such wonderful recipes!!!

I make these all the time! I found them on egullet.com some time ago, under the name “smashed potatoes”. That’s what we call them, and I use the bottom of a glass for the smashing. Works just fine, as you suspected.

I spent two months in Australia back in the early 90′s and no one fixed these for me! I feel cheated! I guess I’ll just have to make them myself.

hm. Those do look yummy..and that fact that they get a bit crispy makes them even more tempting! I’ll be making these.

Wow! These look yummy! Thanks, Lisa for the garlic suggestion, I’ll add it with the rosemary. Just a little advise, if you will. If you have really good cooking pots, bring the water to a boil before you add the salt to the pot. Adding it to cold water allows the salt to sink to the bottom and could possibly pit the interior surface of stainless steel pans. This advise is actually from the AllClad company. After spending heaps of money on cookware, it’s nice to keep them pretty.
