Tomato Pesto

Ingredients

  • 1/3 c. sun-dried tomatoes, drained
  • 1/4 c. roasted almonds
  • 2 Tbsp. plus 1 tsp. olive oil (more if needed)
  • 2 Tbsp. finely chopped fresh basil

Preparation

Step 1

In food processor with knife blade, pulse tomatoes, almonds, 2 tablespoons oil, and 1/4 teaspoon pepper until coarsely ground.
Stir basil into pesto.

Top fish or chops with a dollop.
