Linguine with Tuna, Garlic & Olive Oil, June

  • 1 lb. linguine
  • 4 cloves minced garlic
  • 1/4 C olive oil
  • 6 oz tuna packed in water
  • 3/4 C minced parsley
  • 1/2 t crushed red pepper
  • Salt & pepper



Step 1

Cook linguine in large pot of boiling water til as dente. Reserve 1 C of cooking water, then drain pasta & return to pot.
Meanwhile in small saucepan, cook garlic in olive oil over lo heat til litely browned, @ 10 min.. Add 1/2 C cooking water, tuna, parsley & crushed red pepper. Cook over mod heat @ 2 min. Pour sauce into with linguine, add remaining 1/2 C cooking liquid & simmer over hi heat, tossing, til sauce is mostly absorbed, @ 2 min.
