Carmelized Broccoli

Ingredients

  • 2 T plus 1 t olive oil
  • 8 c small broccoli florets
  • 1 c diced sweet onion
  • 1/2 c walnuts, roughly chopped
  • 2 T balsamic vinegar
  • 1/2 c raisins
  • 3/4 t salt
  • 1/8 t pepper

Preparation

Step 1

Heat 2 T olive oil in a large skillet over med-high heat. Add broccoli florets and onion; cook 5 mins. Stir in walnuts; cook 2 mins. Add balsamic vinegar and raisins; cook 2 more mins. Remove from heat and stir in salt, pepper and remaining 1 t olive oil.
